Grilled Shrimp with Lemon-Pesto Rice

I’ve been cooking about 4 times a week, trying to go through all of my magazine pull outs, printed recipes I found online, etc… I found one this weekend that was so easy to make an only really required 2 fresh ingredients; tomatoes and one lemon. The rest could be in your pantry or freezer. I love pesto, so anything in that category is a yes for me. I actually ended up not using 1 cup at all, more like 3/4 of a cup (but really just eyeball it). I used frozen Trader Joe’s shrimp and it was so easy, healthy and good!
