Beef, Vegetable and Barley Soup

This was a super easy recipe to make…I started to brown the beef around 8 am while also making breakfast for the kids, popped it in the slow cooker for 8 hours on low (adding some extra carrots I had on hand) and voila! David loved it. Not too heavy but just filling enough. I served it with some stuffed mushrooms as an appetizer.
