North African Beef-and-Carrot Stew with Mint

My goal is to try at least 1 or 2 new recipes a week and I line up our menu for the week the weekend prior. I actually enjoy, when I have the time, to pour through my ripped out recipes and plan a well balanced meal for us all even if only 2 out of 4 actually enjoy. A for effort I say! I got home from work at literally 4:59 pm and on went Wild Kratts on TV and it took about 25 minutes from chopping the onions and carrots to sprinkling on the fresh mint at the end. I had the meat pre-chopped from the butcher (which was helpful) and used a great quinoa blend which was fantastic. A really delicious surprise with a hint of spice from the cayenne pepper.
