I’ve been wanting to make this for a few weeks and envisioned serving it with some great marinated flank steak and side salad. Instead I opted to go with salmon on the grill. I went a little light on the curry which next time I will not do! (My curry powder was from Dean and Deluca and amazing!!) Great and easy one pot side dish and really looks beautiful when “unveiled”. The chickpeas added a nice texture as well-just be sure to not overcook the cauliflower!
